Grass Fed Beef
|
Beef is a by-product of a dairy operation. Rather than selling out bull calves at auction we raise them on pasture and have them processed at a local meat packing plant. As a result, we have control over the entire process. The animals live natural lives, free ranged on pasture and are given no antibiotics or artifical hormones. We also inspect the plant that does the processing and the State of Virginia Department of Inspections is also present to ensure the highest possible quality in meat packing. This results in better meat, free of chemicals and locally produced, reducing its "carbon footprint."

Pastured Pork
|
Pork is another "by-product" of a dairy operation. Historically, it was not uncommon for a small dairy to also raise hogs as it provided the dairy with an outlet for waste milk. In cheese making, whey is produced as a by-product of making semi-soft cheeses. The whey, a yellowish clear liquid, is high in proteins and sugars and makes an excellent feed for hogs and in turn produces excellent pork. Sterling Bridge Dairy Farm also pastures its hogs giving them access to roots and acorns, that in turn produce superior pork products.
